Beef Chili Recipe: A Comforting Classic

Ingredients:

  • 1 tbsp olive oil

  • 1 lb lean ground beef

  • ½ large yellow onion, finely chopped

  • 3 cloves of garlic, minced

  • 2 (8 oz) cans black beans, drained and rinsed

  • 1 (8 oz) can red kidney beans, drained and rinsed

  • 1 (8 oz) can white beans, drained and rinsed

  • 1 (8 oz) can corn, drained

  • 1 (28 oz) can diced tomatoes

  • 1 (8 oz) can tomato sauce

  • 1 (4 oz) tomato paste

  • 1 tsp chili powder

  • 3 tsp ground cumin

  • 2 tsp paprika

  • 1 tsp cumin

  • Salt and freshly ground black pepper

  • Shredded cheddar cheese, avocado, sour cream, and/or chives for serving

Prep Time: 15 minutes

Cook Time: 4 hours

Total Time: 4 hours and 15 minutes


Step 1: Sauté Aromatics

  1. Heat 1 tablespoon of olive oil in a cast iron pot over medium heat, or use a large pot on medium-high heat.

  2. Add the finely chopped ½ large yellow onion and sauté for about 2 minutes until translucent.

  3. Add the minced garlic and sauté for an additional minute until fragrant.


Step 2: Brown the Beef

  1. Return the skillet to medium-high heat and add the 1 lb lean ground beef.

  2. Break up the beef as you stir and cook until it's browned, about 5 minutes.


Step 3: Combine Ingredients

  1. Add in the drained and rinsed 2 (8 oz) cans black beans, 1 (8 oz) can red kidney beans, 1 (8 oz) can white beans, and 1 (8 oz) can corn to the pot.

  2. Pour in the 1 (28 oz) can diced tomatoes, 1 (8 oz) can tomato sauce, and 1 (4 oz) tomato paste.

  3. Sprinkle in 1 tsp chili powder, 3 tsp ground cumin, 2 tsp paprika, and an additional 1 tsp cumin.

  4. Season with salt and freshly ground black pepper to taste.


Step 4: Simmer & Slow Cook

  1. Cover the pot with a lid and set the heat to low.

  2. Allow the chili to simmer and meld its flavors together for 4 hours, stirring every half hour or so.



Step 5: Serve & Enjoy

  1. Once the chili has simmered, ladle it into bowls.

  2. Top each serving with shredded cheddar cheese, a dollop of sour cream, fresh sliced avocado, and a sprinkle of chopped chives.

  3. Customize your bowl with additional toppings if desired.
