Beef Zucchini Gnocchi

Ingredients:

  • 10 oz Ground Beef

  • ¾ lb Gnocchi

  • 2 cloves Garlic

  • 1 Zucchini

  • 2 tbsp Tomato Paste

  • 1 ½ tsp Chili Paste

  • 1 tsp Garlic Salt

  • 1 tbsp Olive Oil

  • Dash of Salt and Pepper

  • ¼ cup Mascarpone


Directions:


Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes


Step 1: Prepare the Ingredients

  1. Heat a medium pot of salted water to boiling on high.

  2. Wash and dry the zucchini; halve lengthwise, then thinly slice crosswise.

  3. If necessary, peel the garlic, then roughly chop.

Step 2: Sauté the Zucchini

  1. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot.

  2. Add the sliced zucchini in an even layer. Season with salt and pepper.

  3. Cook without stirring for 3 to 4 minutes, or until lightly browned.

  4. Transfer the zucchini to a plate.

Step 3: Cook the Beef

  1. In the same pan, heat another drizzle of olive oil on medium-high until hot.

  2. Add the ground beef; season with salt and pepper.

  3. Cook, frequently breaking the meat apart with a spoon, for 4 to 5 minutes, or until lightly browned.

  4. Carefully drain off and discard any excess oil.

  5. Add the chopped garlic, tomato paste, and chili paste to the beef. Adjust the chili paste according to your desired level of spiciness. Season with salt and pepper.

  6. Cook, stirring constantly, for 1 to 2 minutes, or until the beef is fully cooked and the flavors are combined.

Step 4: Create the Sauce

  1. Add the browned zucchini and 3/4 cup of water to the pan. Season with salt and pepper.

  2. Cook, stirring frequently, for 2 to 3 minutes, or until the sauce thickens. Turn off the heat.

Step 5: Cook the Gnocchi

  1. While the beef cooks, add the gnocchi to the pot of boiling water.

  2. Cook for 2 to 3 minutes, or until the gnocchi float to the top of the pot. Drain the gnocchi thoroughly.

Step 6: Combine and Serve

  1. Add the cooked gnocchi and mascarpone to the pan of cooked beef and zucchini.

  2. Stir to thoroughly combine. Season with salt and pepper to taste.
